Every loaf starts with the foldling — our sourdough starter. He's high maintenance, always hungry, and a bit of an attention seeker. Moody one day, bubbly the next. But that's the charm, and you'll find a little of him in every loaf.

We feed him, fold him, and turn him into bread we're genuinely proud to hand you. A little at a time, made well, baked fresh to your order.

bread care

kept alive, on purpose

No preservatives — so the flavour deepens and gets a little tangier over a few days. That's just the sourdough doing its thing.

storing

A paper bag or breathable cloth at room temperature keeps it happy for 1–2 days. If you're not going to use it within that time, slice it up and freeze it — it toasts straight from frozen beautifully.

reheating

Warm in a 180°C oven for 5–10 minutes, or toast slices straight up for a crisp crust and soft crumb.
